Prepare all ingredients as listed above.
For the cucumber water: Place cucumber slices in a pitcher with water and let infuse in the refrigerator. Serve over ice if desired.
In a medium bowl, combine grated onion, minced garlic, ground beef, cinnamon, allspice, black pepper, salt, parsley, and olive oil. Mix well by hand or with a spoon until fully combined.
Carefully open each pita half to create a pocket without tearing. Stuff each pita half with the beef mixture, spreading it evenly inside and flattening slightly for even cooking.
Lightly brush the outsides of the stuffed pita halves with olive oil.
Preheat a nonstick pan over medium heat.
Cook the stuffed pita halves on both sides until the bread is crisp and the beef reaches an internal temperature of 160°F (71°C). Slice each in half before serving.
In a bowl, combine yogurt, lemon juice, and dill.
Serve the arayes with sauce, apple slices, and cucumber water.
