Apricot Delight

Ingredients

  • 2 tsp Mascarpone cheese
  • 1/4 tsp Vanilla extract
  • 2 tbsp Honey
  • 1/2 cup Dried apricots
  • 1/4 cup Walnuts chopped
  • 2 tsp Caramel sauce

Instructions

  • Whisk the mascarpone and vanilla in a bowl until smooth. Set aside.
  • Add the honey, apricots, walnuts to a nonstick pan on medium heat. Bring to a low simmer to soften the apricots and candy the walnuts. Then set aside to cool.
  • Portion and top with mascarpone. Drizzle with caramel.
