Preheat the oven to 375 degrees. Lightly grease a small baking vessel or ramekins with nonstick spray.
In a saute pan over medium heat, add the oil, apples, granulated sugar, cardamom, nutmeg, and walnut. Saute until the apples start to become tender then remove from the heat.
In a bowl mix the flour, baking powder, salt, vanilla, and egg until combined. Then mix in the apple mixture and 1/3 of the caramel until fully combined. Evenly distribute the mix into the baking vessel.
Bake for 15 to 20 minutes until a toothpick inserted into the center comes out clean. Set aside to cool.
Top with caramel before serving.
