Apple Walnut Caramel Cake

Ingredients

  • Nonstick spray
  • 1 tbsp Extra-virgin olive oil
  • 1/2 Apples peeled and diced small
  • 1 tbsp Granulated sugar
  • 1/4 tsp Ground cardamom
  • pinch Ground nutmeg
  • 2 tbsp Walnuts chopped
  • 1/4 cup All-purpose flour
  • 1/4 tsp Baking powder
  • Pinch Salt
  • 1/2 tsp Vanilla extract
  • 1 Egg
  • 3 tbsp Caramel sauce

Instructions

  • Preheat the oven to 375 degrees. Lightly grease a small baking vessel or ramekins with nonstick spray.
  • In a saute pan over medium heat, add the oil, apples, granulated sugar, cardamom, nutmeg, and walnut. Saute until the apples start to become tender then remove from the heat.
  • In a bowl mix the flour, baking powder, salt, vanilla, and egg until combined. Then mix in the apple mixture and 1/3 of the caramel until fully combined. Evenly distribute the mix into the baking vessel.
  • Bake for 15 to 20 minutes until a toothpick inserted into the center comes out clean. Set aside to cool.
  • Top with caramel before serving.
