Preheat a waffle maker and lightly coat with nonstick spray.
For the chicken sausage: If raw, cook in a 400 degree oven to an internal temperature of 160 degrees using a thermometer. If already cooked: Preheat a non-stick pan over medium heat and brown the chicken sausage slices on each side. For the sauce: Add the butter, sugar, cinnamon, allspice, and apples to a saucepan on medium heat. Bring to a simmer while stirring to combine. Add in the water and raisins, bring to a simmer until the apples are tender. Slowly whisk in the cornstarch/water slurry a little at a time, while simmering, until the liquid becomes thick and smooth. Then remove from the heat and cover with a lid to keep warm. Reheat on low before serving if needed.
For the waffles: Whisk together flour, cinnamon, baking powder, brown sugar and salt in a bowl. Stir in the milk a little at a time until a smooth batter forms (not too thin or watery, and not too thick or clumpy).
Using about 1/2 cup per portion, ladle the batter in the waffle maker and cook according to the directions.
Spoon the apple mixture over the waffles. Serve with chicken sausage and grapes.
