Apple Peanut Butter Oatmeal

Ingredients

  • 8 oz Breakfast sausage links
  • 1/4 cup Shredded coconut lightly toasted
  • 1 cup Rolled oats
  • 2 cups Milk
  • 4 tbsp Peanut butter
  • 1/2 tsp Vanilla extract
  • 2 Apples diced small
  • 1/2 cup Raisins
  • 1 tsp Ground cinnamon

Instructions

  • Preheat the oven to 400 degrees. Place the sausage links on a baking sheet and cook to an internal temperature of 150 degrees using a thermometer and nicely browned.
  • Place the coconut in a saucepan on medium heat. Saute until light golden brown. Remove from the pan and set aside.
  • Place the oats and milk in a saucepan over medium low heat. Cook the oatmeal according to the instructions on the package. Once tender stir in the peanut butter and vanilla.
  • Portion the oatmeal, top with apple, toasted coconut, and raisins. Garnish with cinnamon. Serve with sausage.
