In a medium saucepan, combine the rolled oats, water, cinnamon, nutmeg, and salt. Bring to a boil over medium-high heat.
Reduce heat to low and simmer for about 5-7 minutes, stirring occasionally, until the oatmeal is thick and creamy.
Brew and prepare the coffee to your liking.
Add the diced apple and honey to the oatmeal and stir well to combine. Continue cooking for another 2-3 minutes, or until the apple is soft and tender. Remove from the heat and stir in the milk.
Portion the oatmeal into bowls. Serve with cantaloupe and coffee.
