Ingredients

1 cups Apple cider
2 tbsp Granulated sugar
1.5 tsp Ground cinnamon divided
1 cup All-purpose flour
1/4 cup Brown sugar packed
1 tsp Baking powder
1/4 tsp Kosher salt
pinch Baking soda
pinch Ground nutmeg
2 tbsp Butter melted
1 Egg lightly beaten

Instructions

Preheat the oven to 325 degrees.
Heat apple cider in a small saucepan over high heat. Bring to a boil; reduce heat and simmer, stirring occasionally, until reduced by about 2/3, about 15-20 minutes. Let cool completely.
In a small bowl, combine granulated sugar and half of the cinnamon; set aside.
In a large bowl, combine flour, brown sugar, baking powder, salt, baking soda, nutmeg and remaining cinnamon.
In a large glass measuring cup or another bowl, whisk together butter, eggs and apple cider.
Pour mixture over dry ingredients and stir using a rubber spatula just until combined.
Spoon or pipe the mixture into a donut pan or muffin tin.
Bake for about 15 minutes until a toothpick inserted into the donut comes out clean. Then roll in cinnamon sugar mixture.
*If using a muffin tin gently poke a hole out of the center using the end of a wooden spoon if desired.

Notes

Pro tip: Another way to make these without a donut pan or muffin pan is to use a round mold. If you don’t want your donuts to have a muffin bottom and need a nice round shape, use a round mold that you can simply lay on the baking sheet or parchment paper-lined sheet. Fill up the round mold three-quarters of the space as the donut would rise. Use either a small cap of a bottle or create a hole after baking using a circular cookie cutter or similar apparatus.
