Ingredients

  • 3/4 cup Raspberries plus some for garnish
  • 1 tbsp Sugar
  • 1/3 cup Water
  • 1/4 cup Heavy cream
  • 1 tsp Powdered sugar
  • 2.5 oz Whipped cream cheese at room temperature
  • 1/3 tsp Vanilla extract
  • 1 tsp Orange zest
  • 2 tbsp Graham cracker crumbs
  • 2 tbsp Hazelnuts chopped

Instructions

  • Place the raspberries, sugar, and water in a saucepan on medium heat. Bring to a simmer until the berries break down and the liquid starts to turn into a syrup consistency. Remove from the heat and set aside to cool. Refrigerate until cooled completely.
  • In a bowl, using an electric mixer or by hand using a whisk, whip the heavy cream and powdered sugar until stiff peaks form. Gently fold the whipped cream together with the cream cheese and vanilla until combined. Lightly stir in the raspberry sauce and orange zest.
  • Portion the parfait and top with graham cracker crumbs and hazelnuts. Garnish with raspberries.
