Western Flatbread

Ingredients

  • 2 slices Naan bread
  • 2 oz Deli ham
  • 2 tbsp Extra-virgin olive oil
  • 1 tbsp Red onion chopped fine
  • 2 tbsp Green bell pepper quartered
  • 4 Eggs beaten
  • 1/4 cup Cheddar cheese shredded
  • 1 cup Grapes (Check the Fruit guide to substitute seasonal fruits)
  • 1/2 tbsp Scallions chopped
  • Hot sauce optional

Instructions

  • Warm the naan under the oven broiler on low or in a nonstick pan on medium heat.
  • Heat a non-stick pan over medium heat. Once hot, Brown the ham on both sides then place onto the naan.
  • Add the oil to the pan. Saute the onion and peppers until they start to soften.
  • Add the eggs and cheese into the pan. Move the eggs using quick circular motions with a spatula until creamy, (move the pan on and off the heat as needed to prevent the eggs from overcooking or drying out). Remove the pan from the heat while the eggs are still moist.  Season with salt and pepper. 
  • Serve the eggs on the flatbread with grapes. Garnish with scallions and hot sauce.
