Ingredients
FOR THE CAKE
- 1/3 cup Cacao powder
- 1 tsp Vanilla extract
- 3/4 cup Milk brought to a simmer
- 1/3 cup Canola oil
- 1/2 cup Sugar
- 1/4 cup Brown sugar
- 1 tbsp White vinegar
- 1/2 tsp Kosher salt
- 1 1/4 cup All-purpose flour
- 1 tsp Baking powder
- 3/4 tsp Baking soda
- 4 tsp Sweetened coconut flakes or more if desired
FOR THE ICING
- 1/4 cup Cacao powder
- 1/2 cup Powdered sugar plus a small amount more for dusting
- 2 tbsp Orange juice
Instructions
- Preheat oven to 350°F. Grease an 8 x 8 inch baking dish with nonstick spray, line with parchment if desired (to alleviate anything from sticking to the pan).
- In a large bowl, whisk together cocoa, vanilla, and milk until smooth. Let sit for 2 minutes, then stir in oil, sugars, vinegar, and salt until fully incorporated. Stir in flour, baking powder, and baking soda until completely smooth, then pour into prepared baking dish.
- Bake until a toothpick inserted into the center of the cake comes out with only a few crumbs, about 25 minutes.
- Meanwhile, make the icing: In a bowl, whisk together cocoa, powdered sugar, and juice until completely smooth. Set aside until ready to use, giving the mixture a stir before pouring onto the cake.
- Let cake cool to room temperature. Generously drizzle icing over top and sprinkle with coconut.
Notes
Pro Tip: If cutting this recipe into smaller portions make sure you use an appropriately sized vessel to bake in. Also, the cooking time will be reduced based on the amount of batter being used, monitor accordingly.
