Ingredients
- 2 tbsp Extra-virgin olive oil
- 4 oz Turkey sausage patty
- 4 Eggs
- 2 slices Sourdough bread toasted
- 2 tsp Butter if desired
- 1/2 cup Grapes sliced (Check the Fruit guide to substitute seasonal fruits)
Instructions
- Heat half of the oil in a non-stick pan or skillet over medium heat. Once hot, brown the sausage patties on both sides golden brown to an internal temperature of 155 degrees using a thermometer. Then set aside.
- Heat a non-stick pan over medium heat. Add the remaining oil. Crack the eggs into the pan, season with salt and pepper. Cook until the whites start to become firm, then add 1 tablespoon of water and cover with a lid to help firm up the whites of the egg. Season with salt and pepper.
- Serve the eggs with sausage, toast (buttered if desired), and grapes.
