Turkey Quesadilla

Ingredients

  • Nonstick spray
  • 1/2 cup Cheddar cheese shredded
  • 4 large Tortilla wraps
  • 2 cups Baby spinach
  • 8 oz Deli turkey breast or use fresh roasted turkey in the deli meats tab
  • 1/2 cup Red onion shaved
  • 2 tbsp Fresh cilantro garnish

Scallion Yogurt

  • 3 tbsp Greek yogurt
  • 1 tbsp Scallions minced
  • 1/4 tsp Onion powder
  • 1/4 tsp Garlic powder

Instructions

  • Preheat a panini style grill. Lightly grease with nonstick spray.
  • For the sauce: Whisk all the ingredients in a bowl. Season with salt and pepper to taste.
  • Spread the cheese onto the tortilla and top with spinach, turkey and onion. Then fold in half.
    Alternatively use a nonstick pan on medium heat.
  • Cook until the cheese is nicely melted and the outside is golden brown. Repeat for other portions.
  • Cut into wedges. Serve with sauce on the side. Garnish with cilantro.
