Ingredients
- 2 slices Sourdough bread lightly toasted
- 1 cups Baby spinach
- 2 tbsp Extra-virgin olive oil
- 1 tsp Lemon juice
- 4 oz Canned albacore tuna drained, (or your preference of tuna)
- 2 tbsp Celery diced small
- 2 tbsp Baby carrots diced small
- 2 tbsp Green olives chopped
- 2 tbsp Red onion diced fine
- 2 tbsp Cucumber diced
- 2 Pickle spears
- 2 oz Potato chips
Instructions
- Lightly toast the bread. Then top with spinach.
- In a bowl, mix together the remaining ingredients (except the pickle and chips). Season with salt and pepper to taste. Add a little more olive oil as needed. Add more lemon if needed to brighten up the flavors. Be careful not to add too much or make it too lemony. Refrigerate
- Spoon the tuna over the bread. Serve with a pickle and chips.
