Ingredients

  • 2 slices Sourdough bread lightly toasted
  • 1 cups Baby spinach
  • 2 tbsp Extra-virgin olive oil
  • 1 tsp Lemon juice
  • 4 oz Canned albacore tuna drained, (or your preference of tuna)
  • 2 tbsp Celery diced small
  • 2 tbsp Baby carrots diced small
  • 2 tbsp Green olives chopped
  • 2 tbsp Red onion diced fine
  • 2 tbsp Cucumber diced
  • 2 Pickle spears
  • 2 oz Potato chips

Instructions

  • Lightly toast the bread. Then top with spinach.
  • In a bowl, mix together the remaining ingredients (except the pickle and chips). Season with salt and pepper to taste. Add a little more olive oil as needed. Add more lemon if needed to brighten up the flavors. Be careful not to add too much or make it too lemony. Refrigerate
  • Spoon the tuna over the bread. Serve with a pickle and chips.
