Ingredients

Tuna Sandwich

  • 10 oz Tuna fish (drained) chunk white tuna or your preference
  • 2 TBSP Celery minced
  • 2 TBSP Red onion minced
  • 1 tsp Lemon juice
  • 3 TBSP Mayonnaise more as needed
  • Salt
  • Black pepper
  • 4 slices Sourdough bread lightly toasted
  • 1 cup Butter lettuce cut to fit the bread
  • 4 slices Tomato
  • 2 oz BBQ potato chips
  • 2 Pickle spears

Pineapple Orange Spritzer

  • 1 cup Pineapple juice
  • ½ cup Orange juice
  • ½ cup Sparkling water or club soda
  • Ice cubes

Instructions

  • Prep ingredients per the instructions above.
  • In a small mixing bowl break up the tuna with a fork. Toss with celery, onion, lemon juice, and mayonnaise as needed until the tuna is to your desired creaminess. Season with pepper to taste. Stir to combine.
  • Lightly toast the bread.
  • Assemble the sandwich: Layer the bread with lettuce, tomato, and tuna salad. Top with a slice of bread then cut in half.
  • Prepare the pineapple orange spritzer: In a mixing jug or bowl, combine the pineapple juice and orange juice. Pour the fruit juice mixture evenly into glasses over ice.
  • Top each glass with sparkling water or club soda. Stir.
  • Serve: Enjoy the sandwich with barbecue chips, pickle, and pineapple orange spritzer.
