Tarragon Tortellini

Ingredients

  • 4 oz Cheese tortellini substitute tortellini if needed
  • 1 tbsp Extra-virgin olive oil plus more for drizzling
  • 1/4 lb Smoked Turkey Sausage Links
  • 1 tbsp Butter
  • 2 cups Tuscan Kale chopped
  • 2 tbsp Red onion minced
  • 3 cloves Garlic minced
  • 1 tsp All-purpose flour
  • 3/4 cup Chicken broth
  • 2 tbsp Heavy cream
  • 1 tbsp Fresh tarragon
  • 4 tsp Parmesan cheese grated
  • 2 tsp Red pepper flakes optional garnish
  • 2 Dinner rolls warmed in a 300 degree oven 3 to 5 minutes prior to serving if desired

Instructions

  • Cook the tortellini according to the package directions. Drain well and set aside.
  • Heat a grill or grill pan over medium heat. Drizzle with a little bit of olive oil to prevent from sticking. Cook sausage until it has a nice char but not burnt. Set aside before slicing.
  • Heat a non-stick pan over medium heat. Once hot, add the oil and butter. Sauté the kale, onion, and garlic until softened. Then stir in the flour.
  • Stir in the broth, cream, and tarragon. Bring to a simmer until the flavor concentrates and the sauce starts to thicken to a creamy consistency. Season with salt and pepper to taste. Toss in the pasta and sausage.
  • Remove from the heat and serve immediately. Garnish with parmesan and red pepper flakes. Serve with bread.
