Ingredients
- 1 pound Ground beef
- 1/4 Onion peeled and chopped
- 1/4 Red bell pepper seeded and chopped
- 1 clove Garlic minced
- 1/3 cup Corn
- 5 oz Crushed tomatoes can
- 1 tsp Jalapeño pepper seeded and diced
- 1 tsp Chili powder
- 1 tsp Ground cumin
- 2 oz Cheddar cheese shredded
Topping
- 3/4 cup corn flour
- 3/4 tsp Baking powder
- 3/4 cup Chicken broth
- 3 oz Butter melted
- 2 oz Cheddar cheese shredded
Instructions
- Preheat the oven to 400 degrees.
- Heat an oven safe saute pan or cast iron skillet over medium heat. Add the ground beef, chili powder, and cumin and break into small pieces with a wooden spoon. Brown the meat, mix in the chopped onion, bell pepper, and garlic. Cook until the onions have softened. Then mix in the corn, crushed tomatoes, jalapeno, and cheese. Season with salt and pepper. Stir well and turn off the heat.
- Meanwhile, mix the corn flour and baking powder in a bowl. Add in the chicken broth and butter. Whisk until smooth. Then stir in the cheese.
- Scoop the corn batter evenly over the top of the beef that's in the skillet or saute pan and spread to the edges of the pan. Bake for 30 minutes or until a toothpick inserted into the center of the corn batter comes out clean. Serve.
