Ingredients
For The Salad:
- 1/2 cup Quinoa
- 1.5 cups Strawberries quartered
- 1 Avocados pitted and diced
- 1/4 cup Walnuts chopped and toasted
- 1/3 cup Feta cheese crumbled
- 1/2 cup Arugula
- 2 slices Crusty bread toasted
For The Dressing:
- 1 TBSP Lime juice freshly squeezed
- 1 TBSP Extra-virgin olive oil
- 1/3 TBSP Maple syrup
- 3/4 tsp Dijon mustard
- Salt to taste
- Black pepper to taste
Pomegranate Spritzer
- 10 oz Sparkling water
- 6 oz Pure Pomegranate juice
- 1 tsp Lime juice to taste
Instructions
- Cook the quinoa according to the package directions and let cool.
- Prep the ingredients for the salad per the instructions above.
- In a small jar with a lid, combine the lime juice, olive oil, maple syrup, and mustard. Cover and shake until mixed well. Taste for seasoning and add salt and pepper as needed.
- Mix all the ingredients for the spritzer, add a hint of lime to your desired taste.
- Toss the strawberries, avocados, cooked quinoa, walnuts, feta, and arugula together in a large bowl. Add the dressing and toss again. Serve with bread and spritzer.
