Ingredients

For The Salad:

  • 1/2 cup Quinoa
  • 1.5 cups Strawberries quartered
  • 1 Avocados pitted and diced
  • 1/4 cup Walnuts chopped and toasted
  • 1/3 cup Feta cheese crumbled
  • 1/2 cup Arugula
  • 2 slices Crusty bread toasted

For The Dressing:

  • 1 TBSP Lime juice freshly squeezed
  • 1 TBSP Extra-virgin olive oil
  • 1/3 TBSP Maple syrup
  • 3/4 tsp Dijon mustard
  • Salt to taste
  • Black pepper to taste

Pomegranate Spritzer

  • 10 oz Sparkling water
  • 6 oz Pure Pomegranate juice
  • 1 tsp Lime juice to taste

Instructions

  • Cook the quinoa according to the package directions and let cool.
  • Prep the ingredients for the salad per the instructions above.
  • In a small jar with a lid, combine the lime juice, olive oil, maple syrup, and mustard. Cover and shake until mixed well. Taste for seasoning and add salt and pepper as needed.
  • Mix all the ingredients for the spritzer, add a hint of lime to your desired taste.
  • Toss the strawberries, avocados, cooked quinoa, walnuts, feta, and arugula together in a large bowl. Add the dressing and toss again. Serve with bread and spritzer.
