Ingredients
- 1/2 lb Strawberries sliced
- 1/4 cup Granulated sugar
- 1/2 cup Water
- 1/2 cup Heavy cream (cold)
- 4 Graham cracker squares 2 crackers per portion
- 2 tsp Powdered sugar sifted
Instructions
- Place the strawberries, sugar and water in a saucepan over medium heat. Bring to a simmer for 10 minutes. Remove from the heat and place in a blender and blend until smooth. Place in the refrigerator or freezer to cool completely.
- In a bowl add the cream and whisk until stiff peaks form.
- Fold the strawberry purree into the cream. Pipe or spoon the mousse onto graham crackers. Place in the freezer for 10 to 15 minutes prior to serving to firm up. Garnish with powdered sugar.
