Ingredients
- 1 Tbsp Extra-virgin olive oil
- 1 cup Red onion sliced (see pro tips)
- 1 cup Green bell pepper sliced (see pro tips)
- 1 cup Red bell pepper sliced (see pro tips)
- 3 cloves Garlic sliced
- 4 oz Ground beef sliced thin
- 1/2 tsp Paprika
- 2 cups Beef broth
- 1 tbsp Tomato paste
- 1/4 cup White rice
- 3 cups Broccoli cut into bite sized florets
- 2 slices Crusty bread
- 1 tsp Fresh parsley chopped
Instructions
- Heat a nonstick pan over medium heat. Once hot, add the oil. Saute the onion, pepper, and garlic until they start to soften. Crumble in the beef and brown while breaking it up into smaller pieces. Season with paprika, salt, and pepper.
- Stir in the broth, tomato paste, and rice. Partially cover with a lid and simmer until the rice is tender. Once the rice is almost tender, stir in the broccoli and cook until tender. Season with salt and pepper to taste.
- Serve with bread. Garnish with parsley.
