Stir Fry Fajita Noodles

Ingredients

  • 8 oz Rice noodles or your preference of noodle
  • 2 tbsp Extra-virgin olive oil
  • 1/2 Red onion sliced
  • 1 Red bell pepper seeded and sliced
  • 4 cloves Garlic minced
  • 1/2 lb Sirloin steaks sliced thin
  • 1/4 cup Reduced-sodium soy sauce
  • 3/4 cup Beef broth
  • 2 tsp Cornstarch dissolved in an equal amount of water
  • 4 tbsp Fresh cilantro chopped, plus more for garnish
  • 4 slices Crusty bread toasted
  • Fresh cilantro garnish
  • 2 tsp Cotija cheese finely crumbled for garnish

Instructions

  • Bring a pot of salted water to a boil. Once most of the meal is complete cook the noodles according to the directions on the package. Drain well.
  • Heat a nonstick pan on medium high heat. Once hot add in the olive oil. Saute the onions and peppers until they soften. Add in the garlic and saute for 1 - 2 minutes. Push the contents of the pan over to one side. Add in the beef and brown all over. Season with salt and pepper.
  • Add the soy sauce and broth; bring to a simmer to concentrate the flavor. Season with salt if needed.
  • Stir in the cornstarch slurry a little at a time until the sauce thickens to a creamy consistency.
    (Add more cornstarch if needed to thicken or add broth to thin the sauce to the proper consistency)
  • Toss in the noodles. Serve with bread and garnish with cilantro and cotija.

Notes

Pro Tip: substitute or add any additional vegetables you would like that you have on hand.
