Ingredients
- 8 oz Rice noodles or your preference of noodle
- 2 tbsp Extra-virgin olive oil
- 1/2 Red onion sliced
- 1 Red bell pepper seeded and sliced
- 4 cloves Garlic minced
- 1/2 lb Sirloin steaks sliced thin
- 1/4 cup Reduced-sodium soy sauce
- 3/4 cup Beef broth
- 2 tsp Cornstarch dissolved in an equal amount of water
- 4 tbsp Fresh cilantro chopped, plus more for garnish
- 4 slices Crusty bread toasted
- Fresh cilantro garnish
- 2 tsp Cotija cheese finely crumbled for garnish
Instructions
- Bring a pot of salted water to a boil. Once most of the meal is complete cook the noodles according to the directions on the package. Drain well.
- Heat a nonstick pan on medium high heat. Once hot add in the olive oil. Saute the onions and peppers until they soften. Add in the garlic and saute for 1 - 2 minutes. Push the contents of the pan over to one side. Add in the beef and brown all over. Season with salt and pepper.
- Add the soy sauce and broth; bring to a simmer to concentrate the flavor. Season with salt if needed.
- Stir in the cornstarch slurry a little at a time until the sauce thickens to a creamy consistency. (Add more cornstarch if needed to thicken or add broth to thin the sauce to the proper consistency)
- Toss in the noodles. Serve with bread and garnish with cilantro and cotija.
