Ingredients
- 8 oz Rice noodles
- 2 tbsp Brown sugar
- 1/4 cup Reduced-sodium soy sauce
- 1 cup Beef broth
- 2 Tbsp Rice wine vinegar
- 1 Tbsp Lime juice
- 1 lb Sirloin steaks
- 2 Tbsp Extra-virgin olive oil
- 1 Red bell pepper sliced into thin strips
- 1 Carrots peeled and shredded
- 3 cups Bok choy optional
- 2 cloves Garlic minced
- 1/2 cup Peanuts chopped
- 1/3 cup Fresh cilantro whole leaves
Instructions
- Preheat a grill or grill pan on medium heat.
- Prepare rice noodles according to directions listed on package.
- In a mixing bowl, whisk together brown sugar, soy sauce, beef broth, rice vinegar, lime juice, set aside.
- Season the steak generously on both sides with salt and pepper. Grill the steak to your desired temperature using a thermometer. (see below) Then set on a cutting board for 3 minutes to rest.
- Heat the oil in a nonstick pan on medium heat. Add the bell pepper and carrots saute 5 - 6 minutes; then add the bok choy, garlic; saute for 2 - 3 minutes. Add in the soy sauce mixture; cook until the bok choy become tender, about 4 - 5 minutes.
- Toss in the noodles. Slice the steak against the grain and serve over the noodles and vegetables. Garnish with peanuts and cilantro.

Steak Internal Temperatures:
- Rare: 115 - 120 degrees F
- Medium Rare: 125 - 130 degrees F
- Medium: 135 - 140 degrees F
- Medium Well: 145 - 150 degrees F
- Well Done: 160 degrees F
