Ingredients

  • 1.5 tbsp Fresh parsley minced
  • 1.5 tbsp Fresh cilantro minced
  • 1/4 tsp Lime juice to taste
  • 3 tbsp Extra-virgin olive oil plus 2 teaspoons for cooking the eggs
  • 8 oz Sirloin steaks
  • 4 slices Sourdough bread toasted
  • 8 Eggs
  • 2 Apples sliced (Check the Fruit guide to substitute seasonal fruits

Instructions

  • In a bowl mix the parsley, cilantro, lime juice, and oil. Season with salt and pepper. Adjust the lime juice or any of the ingredients to taste. Let sit until ready to serve.
  • Season both sides of the steak well with salt and pepper.
  • In a nonstick pan over medium heat cook the steaks on both sides to your desired temperature using a thermometer (see below). Let rest for 5 minutes. Trim the fat off the sides if desired, before slicing thin against the grain. Toast the bread.
  • Heat a nonstick pan over medium heat. Add 1 to 2 teaspoons of oil. Crack the eggs into the pan; cook until egg whites start to become firm, add 1 to 2 tablespoons of water and cover with a lid to help firm the whites up.
  • Serve the eggs with steak. Season with salt and pepper. Place droplets of the herb oil over the eggs, steak, and toast if desired. Serve with apple.

Notes

Steak Internal Temperatures:
  • Rare: 115 - 120 degrees F
  • Medium Rare: 125 - 130 degrees F
  • Medium: 135 - 140 degrees F
  • Medium Well: 145 - 150 degrees F
  • Well Done: 160 degrees F
