Ingredients
- 8 Eggs
- 6 oz Chicken sausage links
- 1 cup Oatmeal
- 4 oz Feta cheese
- 1 tbsp Fresh chives chopped
- 2 cups Grapes (Check the Fruit guide to substitute seasonal fruits)
- 4 slices Sourdough bread toasted and buttered if desired (or your choice of bread)
Instructions
- Bring a saucepan or pot of water to a boil over medium-high heat. Carefully place the eggs into the boiling water with a slotted spoon (for soft boiled runny yolk, set a timer for 5 minutes, for hard boiled set a timer for 9 minutes). Drain the water and fill the saucepan or pot with warm tap water. Let the eggs sit in the water for 5 minutes.
- For the chicken sausage: If raw, cook in a 400°F oven to an internal temperature of 160°F using a thermometer, then chop.If already cooked: Preheat a non-stick pan over medium heat and brown the chicken sausage slices on each side.
- In a pot, cook the oatmeal according to the directions on the package. Season with salt and pepper.
- Peel the hard-boiled eggs.
- Top the oatmeal with eggs, cut in half, chicken sausage, feta, and chives. Serve with grapes and toast.
