Ingredients

  • 4 oz Chicken sausage links
  • 1 tbsp Butter
  • 4 Eggs beaten
  • 2 slices Sourdough bread toasted
  • 2 tbsp Raspberry jam

Instructions

  • Preheat the oven to 400 degrees. Cook the sausage to an internal temperature of 160 degrees using a thermometer until nicely browned and crisp on the outside.
  • Heat a nonstick pan on medium heat. Once hot, add the butter and eggs to the pan, stir the eggs continuously using quick circular motions with a spatula or wooden spoon to fluff up and cook, (move the pan on and off the heat as needed to prevent the eggs from cooking too quickly and overcooking or drying out). Remove the pan from the heat while the eggs are still moist. Season with salt and pepper to taste. 
  • Serve the eggs with sausage and toast with jam.
