Ingredients

  • 6 oz Breakfast sausage links
  • 1 TBSP Butter
  • 4 Eggs beaten
  • 2 slices Sourdough bread toasted
  • 2 tsp Butter
  • 2 TBSP Strawberry jam

Beverage

  • 16 oz Orange juice cold

Instructions

  • Preheat the oven to 400 degrees. Place the sausage on a foil lined baking sheet. Cook in the oven until nicely browned to an internal temperature of 155 degrees using a thermometer.
  • Heat a nonstick pan on medium heat. Once hot, add the butter and eggs into the pan, lower the heat to medium low. Move the eggs using quick circular motions with a spatula or wooden spoon until creamy. (Move the pan on and off the heat as needed to prevent the eggs from overcooking or drying out.) Remove the pan from the heat while the eggs are still moist. Season with salt and pepper to taste.
  • Make toast: Toast the bread in a toaster oven. Spread the butter on the toast, then spread with jam and cut in half.
  • Serve: Enjoy the eggs with sausage, toast, and orange juice.
