Ingredients
- 4 oz Breakfast sausage links
- 1 tbsp Extra-virgin olive oil
- 4 Eggs beaten
- 2 slices Sourdough bread toasted
- 2 tsp Butter optional
- 1 Kiwi peeled and sliced (Check the Fruit guide to substitute seasonal fruits)
- Red pepper flakes garnish (optional)
Instructions
- Preheat the oven to 400 degrees. Cook the sausage to an internal temperature of 150 degrees using a thermometer until nicely browned and crisp on the outside.
- Heat a nonstick pan on medium heat. Once hot, add the oil. Add the eggs to the pan, stir the eggs continuously using circular motions with a spatula or wooden spoon to fluff up and cook, (move the pan on and off the heat as needed to prevent the eggs from cooking too quickly and overcooking or drying out). Remove the pan from the heat while the eggs are still moist. Season with salt and pepper to taste.
- Serve the eggs with sausage, toast (buttered if desired), and kiwi. Garnish with red pepper flakes if desired.
