Ingredients
- 2 English muffin lightly toasted (or bread of your choice)
- 2 tsp Extra-virgin olive oil
- 4 oz Breakfast sausage patty or ground sausage formed into patties
- 1/4 cup White cheddar cheese shredded
- 4 Eggs
- 1 Plums pitted and sliced (Check the Fruit guide to substitute seasonal fruits)
Instructions
- Lightly toast the English muffins.
- Heat half the oil in a non-stick pan over medium-low heat. Cook the sausage patty on both sides until it is no longer pink in the middle to an internal temperature of 155 degrees using a thermometer and place on the English muffin.
- Add the remaining oil to the pan. Crack the eggs into the pan and cook until they start to set. Break the yolks and flip the eggs over, top with cheese, and cook until it is melted. Season with salt and pepper. Once cooked, place on the english muffin.
- Serve with plum.
