Ingredients

Sausage Gravy

  • 6 oz Ground sausage
  • 1 tbsp All-purpose flour
  • 3/4 cup Milk
  • 4 slices Multigrain bread toasted
  • 2 tbsp Extra-virgin olive oil
  • 8 Eggs
  • 1/2 Pineapple peeled and sliced

Instructions

  • In a saucepan, cook the sausage over medium heat breaking it up with spatula into smaller pieces until it is no longer pink. Add the flour; cook and stir for 1 minute. Gradually add the milk, stirring constantly. Bring to a simmer; cook and stir until thickened, about 2 minutes. Season with salt and pepper. Remove from the heat and cover with a lid to keep warm.
  • Toast the bread
  • In a nonstick pan heat the oil over low medium heat. Crack the eggs into the pan and cook until the whites of the eggs are firm and no longer runny, about 3 - 5 minutes.
  • Serve the sausage gravy over toast with sunny side up eggs and sliced pineapple.
