Ingredients
- 2 tsp Extra-virgin olive oil
- 2 tbsp Red onion minced
- 2 oz Ground Italian sausage
- 4 Eggs beaten
- 1/4 cup Grape tomatoes quartered
- 1 tbsp Goat cheese crumbled
- 2 tsp Jalapeño pepper minced (optional)
- 2 slices Sourdough bread buttered if desired
- 1 Apple sliced (Check the Fruit guide to substitute seasonal fruits)
Instructions
- Preheat the oven to 375 degrees.
- Heat an oven safe nonstick pan on medium heat. Once hot, add the oil. Saute the onion and sausage while crumbling it into smaller pieces until it is no longer pink.
- Stir the eggs, tomato, cheese, and jalapeno (if using) into the pan. Stir the eggs around in short circular motions to distribute the ingredients evenly and slightly precook and fluff up the egg. Place the pan in the oven until the eggs are firm throughout, about 8 to 10 minutes.
- To release the frittata from the pan, run a spatula around the edge, then underneath, until you can slide or lift it out onto a cutting board or serving plate.
- Cut into wedges. Serve with toast, and apple.
