Ingredients

  • 6 oz Ground Italian sausage
  • 1 tbsp Extra-virgin olive oil
  • 8 Eggs scrambled
  • 2 oz Cheddar cheese shredded
  • 4 Whole wheat tortilla
  • 2 Apples sliced

Instructions

  • Heat a nonstick pan over medium heat.
  • Add the sausage and brown while breaking up into smaller pieces with a spatula until it is no longer pink.
  • Add the oil to the pan then add in the eggs. Move the eggs around the pan using a spatula until they are firm but still moist and no longer runny. Mix in the cheese and adjust the seasoning with salt and pepper to taste.
  • Place the eggs on the wrap. Fold in the ends and roll tightly. Cut in half and serve with apple slices.
