Ingredients

  • 8 oz Breakfast sausage links about 2 per serving depending on how big they are
  • 2 tsp Extra-virgin olive oil
  • 8 Eggs
  • 4 slices Sourdough bread lightly toasted (buttered if desired)
  • 1 Apple sliced

Instructions

  • For the sausage: cook in a 400°F oven until browned on all sides to an internal temperature of 160°F using a thermometer. 
  • Heat a nonstick pan on medium heat. Once hot, add the oil and crack the eggs into the pan being careful not to break the yolks. Cook until the whites of the eggs start to firm up, add 1 to 2 tablespoons of water to the pan and cover with a lid. Cook until the whites are firm. Season with salt and pepper.
  • Serve the eggs with sausage links, toast, and apple.
