  • Preheat the oven to 400 degrees.
  • In a bowl mix the ground turkey, fennel, garlic powder, paprika, and season with salt until fully combined. Form into equal patties.
    (To check the seasoning take a small piece of the mixture and cook in a pan until cooked through and no longer pink, adjust the seasoning as needed to taste)
  • Cook the sausage in the oven, flipping over halfway through, to an internal temperature of 160°F using a thermometer, about 6 to 8 minutes.
    Be careful not to overcook or they will dry out.
  • Heat a nonstick pan on medium heat. Once hot, add the oil and crack the eggs into the pan being careful not to break the yolks. Cook until the whites of the eggs start to firm up, add 1 to 2 tablespoons of water to the pan and cover with a lid. Cook until the whites are firm. Season with salt and pepper.
  • Serve the eggs with sausage, toast, and grapes.
