Ingredients
- 1/2 lb Chicken breast boneless skinless cut into bite sized pieces
- 2 tbsp Extra-virgin olive oil
- 2 tbsp Red onion diced
- 1 cup Green bell pepper chopped
- 4 cloves Garlic minced
- 1/2 can Fire roasted tomatoes preferably diced
- 1/2 cup Chicken broth more if needed
- 1 cup Baby carrots
- 2 slices Crusty bread toasted
- 2 tbsp Fresh cilantro garnish
Instructions
- Season the chicken well with salt and pepper.
- Heat a saute pan on medium heat. Once hot, add the oil. Saute the onion, pepper, and garlic until they start to soften. Add in the chicken and saute to golden brown. Stir in the fire roasted tomatoes, broth, and carrots. Season with salt and pepper. Simmer until the chicken reaches an internal temperature of 155 degrees using a thermometer and the carrots become tender.
- Season with salt and pepper to taste. Serve with bread. Garnish with cilantro.
