Ingredients

  • 4 tbsp Extra-virgin olive oil
  • 2 tbsp Red wine vinegar
  • 1/2 tsp Dried oregano
  • 4 Ciabatta rolls lightly toasted
  • 12 slices Tomato
  • 2 cups Spring mix
  • 8 oz Salami sliced thin
  • 4 oz Fresh mozzarella sliced
  • 4 tbsp Red onion sliced
  • 4 tbsp Roasted red peppers sliced
  • 4 Pickles halved
  • 4 oz Potato chips

Instructions

  • In a bowl combine the oil, vinegar, and oregano. Season with salt and pepper. Lightly toast the ciabatta.
  • Drizzle the oil and vinegar on the bread. Layer with tomato seasoned with salt and pepper, spring mix, salami, fresh mozzarella, red onion, and roasted peppers. Cut in half and serve with pickles and chips.
