Ingredients
- 1/2 cup White rice
Beans
- 10 oz Pinto beans drained and rinsed
- 1/4 cup Chicken broth or more if needed
- 1 tbsp Ground cumin
- 1 tbsp Chili powder
- 1/2 tsp Garlic powder
Instructions
- Rinse the rice under cold water and drain well.
- Cook the rice according to the instructions on the package. Once cooked drain any excess water if necessary, cover with a lid, and set aside to keep warm.
- Put all of the ingredients for the beans in a pan over medium heat, bring to a simmer. Cook for 7-10 minutes until the liquid has thickened. Using a fork or a whisk mash up the majority of the beans. Season with salt and pepper to taste. Add a little more chicken broth if the beans are too thick or look dry. Serve over rice.
