Pastrami Panini

Ingredients

  • 4 tbsp Thousand Island dressing
  • 8 slices Rye bread lightly toasted
  • 4 oz Jarlsberg cheese sliced
  • 2 cups Sauerkraut or more if desired
  • 8 oz Deli pastrami
  • Nonstick spray
  • 2 oz Potato chips
  • 4 Pickle spears

Instructions

  • Preheat a non-stick pan or panini style grill, over medium heat.
  • Spread the dressing on both slices of bread (or on the side if desired). Layer the bread with cheese, sauerkraut, pastrami, more cheese, and slice of bread.
  • If using a panini style grill, lightly spray with non-stick spray and cook the sandwich until it is golden brown and cheese is melted.
    (If using a pan on the stovetop, add about a teaspoon of oil or more if needed, then the sandwich and cover with a lid. Cook on both sides until the bread is golden brown and the cheese is melted.)
  • Cut in half and serve with chips and pickles.
