Ingredients
- 2 tbsp Extra-virgin olive oil
- 1 cup Mushrooms sliced
- 8 Eggs beaten
- 4 tsp Goat cheese crumbled
- 2 tbsp Fresh chives chopped
- 8 slices Multigrain bread lightly toasted
- 6 oz Chicken sausage links sliced
- 2 Banana sliced (Check the Fall Fruit guide to substitute seasonal fruits)
Instructions
- If making multiple omelets, preheat the oven to 200°F and store the cooked omelets on a baking sheet in the oven until all are finished.
- Heat oil in a non-stick pan over low-medium heat. Add the mushroom and cook until it becomes golden brown and soft.
- Pour the eggs into the pan. As the eggs set around the edge of the pan, gently lift the egg using a spatula, to allow uncooked egg to flow underneath. When eggs are almost set on the surface but still look moist, add the cheese and chives. Slip the spatula under the omelet and fold over.
- In the meantime, lightly toast the bread golden brown.
- In a non-stick pan, brown the chicken sausage on both sides.
- Portion the omelet onto the bread, cut in half and serve with chicken sausage and sliced banana.
