Mozzarella Tomato Pesto Panini

Ingredients

Panini

  • 4 TBSP Pesto sauce
  • 4 slices Sourdough bread sub your choice of bread
  • 4 oz Fresh mozzarella sliced
  • Extra-virgin olive oil drizzled
  • 4 slices Tomato
  • Salt to taste
  • Black pepper to taste
  • Nonstick spray
  • 1 Apple sliced

Sparkling Lemonade

  • 16 oz Sparkling water
  • 8 oz Lemonade

Instructions

  • Prep all sandwich ingredients per instruction above.
  • Preheat a panini grill or skillet over medium heat. While heating, make the panini.
  • Spread the pesto onto one side of each slice of bread. Layer with mozzarella drizzled with olive oil and tomato seasoned with salt and pepper.
  • Grill the panini: Spray the panini grill with nonstick spray and heat. If using a panini grill, press the sandwich down, and cook until the bread is crispy and the cheese is melted. If using a skillet, cook both sides of the sandwich until golden brown and melted while covering with a lid.
  • Mix together the sparkling water and lemonade.
  • To serve: Cut each panini in half and enjoy with apple slices and sparkling lemonade (over ice if desired).
