Ingredients
Panini
- 4 TBSP Pesto sauce
- 4 slices Sourdough bread sub your choice of bread
- 4 oz Fresh mozzarella sliced
- Extra-virgin olive oil drizzled
- 4 slices Tomato
- Salt to taste
- Black pepper to taste
- Nonstick spray
- 1 Apple sliced
Sparkling Lemonade
- 16 oz Sparkling water
- 8 oz Lemonade
Instructions
- Prep all sandwich ingredients per instruction above.
- Preheat a panini grill or skillet over medium heat. While heating, make the panini.
- Spread the pesto onto one side of each slice of bread. Layer with mozzarella drizzled with olive oil and tomato seasoned with salt and pepper.
- Grill the panini: Spray the panini grill with nonstick spray and heat. If using a panini grill, press the sandwich down, and cook until the bread is crispy and the cheese is melted. If using a skillet, cook both sides of the sandwich until golden brown and melted while covering with a lid.
- Mix together the sparkling water and lemonade.
- To serve: Cut each panini in half and enjoy with apple slices and sparkling lemonade (over ice if desired).
