Ingredients

  • 8 oz Bowtie pasta
  • 3/4 pound Ground beef
  • 4 tbsp Red onion diced
  • 1/2 cup Red bell pepper
  • 1 tsp Chili powder use more or less depending on your desired spiciness
  • 1 tbsp Paprika
  • 1 tsp Ground cumin
  • 2 cups Canned diced tomato
  • 4 oz Cheddar cheese shredded
  • 2 tbsp Fresh cilantro chopped

Instructions

  • Cook the pasta according to the instructions on the package. Once cooked, drain well and set aside (reserve about a 1/4 cup of the water).
  • While the pasta is cooking, heat a non-stick pan or skillet over medium heat. Add the ground beef, breaking up into smaller pieces. Half way through browning the meat, add the onion, peppers, chili powder, paprika, and cumin. Season with salt and pepper.
  • Stir in the tomatoes and a little of the pasta water. Bring to a simmer, let the liquid evaporate by about half.
  • Add in the cooked pasta and stir to combine with the sauce evenly. Taste and adjust the seasoning with salt.
  • Top with cheese, cover with a lid and reduce the heat to low.
  • Once the cheese is melted, remove from the heat. Garnish with cilantro.
