Ingredients
- 2 tbsp Extra-virgin olive oil
- 4 cloves Garlic peeled and minced
- 28 oz Canned diced tomato
- 1/4 tsp Sugar if needed
- 4 tbsp Breadcrumbs
- 1/4 cup Milk
- 1 lb Ground beef
- 2 Tbsp Fresh basil chopped
- 4 Sub rolls lightly toasted
- 4 oz Mozzarella cheese shredded
- 4 oz Potato chips
- 4 Pickles halved
Instructions
- Heat the oil in a pot over medium heat, add the minced garlic and stir 1-2 min until fragrant. Stir in tomatoes, season generously with salt, partially cover with a lid and bring to a simmer for 25 minutes.
- In a bowl mix together the breadcrumbs, milk, ground beef, and season with salt and pepper. Mix until well combined. Using your hands form the meat into small equally sized balls.
- Heat a nonstick pan over medium heat. Add the meatballs in batches without crowding the pan and saute until nicely browned (about 3 min per side).
- Add meatballs into the pot with tomato sauce, low simmer for 10 minutes partially covered with a lid, stirring occasionally. Taste the sauce, if it is acidic stir in the sugar. Once the sauce is to your liking, add in the basil; remove the meatballs and set aside.
- Using a blender, blend the sauce until smooth. Adjust the seasoning with salt and pepper to taste.
- In the meantime toast the sub roll under the oven broiler on low. Once it is golden brown, cut the meatballs in half and lay them on the roll and spoon the tomato sauce over top, evenly spread the cheese on the meatballs and melt it underneath the broiler. (make sure to keep your eye on it so that it doesnt burn)
- Cut in half and serve with chips and pickles.
- Freeze any remaining sauce for future use in a tightly sealed container.
