Ingredients
- 1 cup Oatmeal
- 2 tsp Extra-virgin olive oil
- 6 oz Chicken sausage links diced
- 8 Eggs beaten
- 1 cup Tomato diced small
- 4 oz Cheddar cheese shredded
- 2 tbsp Fresh chives chopped
- 1 Apple sliced (Check the Fruit guide to substitute seasonal fruits)
Instructions
- Cook the oatmeal according to the instructions on the package. Season with salt to taste, cover with a lid, and set aside.
- Heat the oil in a non-stick pan over medium heat. Add the chicken sausage and brown on all sides, pour the eggs and tomato into the pan. Move the eggs around until they start to become fluffy and firm but still moist. Remove from the heat.
- Serve the eggs over the oatmeal, top with cheese and chives, serve with apple.
