Lemon Poppy Overnight Oats

Ingredients

  • 1.3 cup Almond milk
  • 1/4 tsp Lemon zest
  • 1 tbsp Poppyseeds
  • 2 tbsp Chia seeds
  • 1 tsp Vanilla extract
  • 2 tbsp Honey or more if needed
  • 1 cup Rolled oats
  • 1/2 cup Greek yogurt
  • 1 Kiwi peeled and sliced
  • 2 tbsp Dates chopped
  • 2 tbsp Granola

Instructions

  • To a mason jar or container with a tight-fitting lid, add almond milk, lemon zest, poppy seeds, chia seeds, vanilla extract, and honey. Stir with a spoon to combine well.
  • Add oats and stir a few more times. Then press down with a spoon to ensure all oats have been moistened and are immersed in milk.
  • Cover securely with a lid or plastic wrap and set in the refrigerator overnight (or for at least 6 hours) to set/soak.
  • Top with yogurt, kiwi, dates, and granola before serving.
