Kale White Bean Soup

Ingredients

  • 1 tbsp Extra-virgin olive oil
  • 1/4 cup Onion finely chopped
  • 4 cloves Garlic sliced thin
  • 3 oz Italian Turkey Sausage removed from the casing
  • 6 cups Chicken broth
  • 4 cups Kale chopped
  • 2 cups Sweet potatoes diced small
  • 1 cup White beans with the liquid from the can
  • 1 tbsp Fresh marjoram chopped
  • 4 slices Crusty bread toasted

Instructions

  • Heat a pot over medium heat. Once hot, add the oil. Saute the onion and garlic until golden brown. Brown the turkey sausage while breaking it up into smaller pieces until no longer pink.
  • Pour in the broth, kale, sweet potato, beans, marjoram, and season with salt and pepper, cover with a lid and bring to a simmer until the potato is tender and the flavor in the soup has developed, about 20 to 30 minutes. Season with salt and pepper to taste.
  • Serve with bread.
