Ingredients
Guacamole
- 1 Avocado pitted and diced
- 2 tsp Red onion minced
- ¼ tsp Lemon juice
- 1 tsp Fresh cilantro chopped
Beef
- 8 oz Ground beef
- ½ tsp Onion powder
- ½ tsp Ground cumin
- ½ tsp Garlic powder
- ½ tsp Paprika
- ¼ tsp Chili powder
Toppings
- 4 oz Tortilla chips
- ¼ cup Monterey jack cheese shredded
- ½ cup Cheddar cheese shredded
- ½ cup Refried beans
- 1 cup Romaine lettuce shredded
- ½ cup Tomato diced small
- 1 Jalapeño pepper sliced (optional)
- ¼ cup Red onion diced
- 4 TBSP Sour cream
Seasoning
- Salt to taste
- Black pepper to taste
Lemon Sparkling Water
- 24 oz Sparkling water cold
- 1 Lemon sliced
- Ice cubes for serving
Instructions
- Prep the ingredients for the toppings and guacamole per the instructions above.
- Preheat the oven broiler on low.
- Make the guacamole: Mash the avocado in a bowl with a fork until smooth. Mix in the remaining ingredients until fully combined. Season with salt and pepper to taste. Refrigerate until ready to serve.
- Make the beef: Heat a nonstick pan over medium heat. Once hot, add the ground beef, onion powder, cumin, garlic powder, paprika, and chili powder. Break up the beef into smaller pieces using a spatula. Once the beef is no longer pink, season with salt and pepper.
- Place the tortilla chips on a baking sheet. Spoon the beef over the tortilla chips; top with all the cheeses, along with refried beans. Broil until the cheese has melted.
- Mix the sparkling water and lemon slices. Serve over ice if desired.
- Serve: Remove nachos from the oven and top with lettuce, tomato, jalapeño (if using), onion, sour cream, and guacamole. Enjoy with lemon sparkling water.
