Ingredients
- 1/4 cup White vinegar
- 1 tbsp Sugar
- 2 cups Red cabbage shredded
- 4 tbsp Mayonnaise
- 1/2 cup Mangos minced or pureed in a blender
- 1 tbsp Fresh cilantro chopped
- 1/2 tsp Honey as needed
- 2 large Chicken breast boneless skinless butterflied
- 2 tbsp Jerk Seasoning or more if needed
- 2 tsp Dried oregano
- 2 tbsp Extra-virgin olive oil
- 4 Sub rolls cut in half lenghtwise
- 8 slices Provolone cheese
- 12 slices Tomato
- 2 oz Potato chips
- 1 cup Pickle slices sliced in rounds or half moons
Instructions
- In a bowl, whisk together the vinegar and sugar until fully dissolved. Toss with the cabbage and set aside. Drain well before using.
- In a bowl whisk the mayo, mangos, and cilantro. Season with salt and pepper to taste. Whisk in honey as needed to taste.
- Season both sides of the chicken very well with jerk seasoning, salt, and oregano.
- Heat a nonstick pan over medium heat. Once hot, add the oil. Brown the chicken on both sides, cook to an internal temperature of 160 degrees using a thermometer. Then Set aside on a cutting board to rest for 3 minutes before slicing thin.
- Lightly toast the bread under the oven broiler on low. Spread the mango mayo onto both halves of the bread. Top with cabbage, sliced chicken, cheese, and tomato seasoned with salt and pepper.
- Cut in half and serve with chips and pickles.
