Jerk Beef Skewers

Ingredients

  • 1/4 cup Orange juice
  • 2 tbsp Lime juice
  • 3 tbsp Jerk Seasoning
  • 1 clove Garlic minced
  • 1 tsp Fresh ginger peeled and minced
  • 2 tsp Ground cumin
  • 8 Wooden skewers
  • 1 pound Sirloin steaks cut into 1-inch cubes
  • 1 Red bell pepper cut in 1-inch pieces
  • 1 Green bell pepper cut into 1 inch pieces
  • 1 Onion cut into 1 inch pieces
  • 12 Mushrooms halved
  • 2 tbsp Fresh cilantro chopped
  • 8 oz Rice noodles

Instructions

  • Preheat a grill on medium heat or an oven to 375 degrees.
  • Mix the orange juice, lime juice, Jerk seasoning, garlic, ginger, and cumin in a bowl and add in the meat. Season with salt and pepper. Set aside. Soak the wooden skewers in water for 10 minutes.
  • Thread the steak, bell peppers, onion, and mushrooms alternately onto the skewers.
  • In a pot of boiling water cook the rice noodles according to the directions on the package. Drain and toss the noodles with the beef marinade and chopped cilantro.
  • While the noodles are cooking, cook the skewers in the oven or grill turning occasionally until the vegetables are soft and the beef reaches the desired doneness using a thermometer (see below).
  • Serve the mango salsa (see recipe) over top of the skewers.

Notes

Steak Internal Temperatures:
  • Rare: 115 - 120 degrees F
  • Medium Rare: 125 - 130 degrees F
  • Medium: 135 - 140 degrees F
  • Medium Well: 145 - 150 degrees F
  • Well Done: 160 degrees F
