Ingredients

Kale and Apple Slaw:

  • 1 Apple sliced or julienned
  • 2 cups Tuscan Kale thinly sliced and stems removed
  • 2 TBSP Extra-virgin olive oil
  • 1 TBSP Apple cider vinegar
  • 1 tsp Honey
  • Salt and pepper to taste

Hot Pastrami Sandwich:

  • 12 TBSP Butter
  • 4 slices Rye bread
  • 2 slice Provolone cheese
  • 2 slice Swiss cheese
  • 8 oz Deli pastrami
  • 6 oz Sauerkraut
  • 4 TBSP Mayonnaise
  • 1 TBSP Yellow mustard

Kombucha:

  • 24 oz Kombucha (flavor of your choice)

Instructions

  • Prep all ingredients per instructions above.
  • Prepare Kale and Apple Slaw: In a bowl, whisk together olive oil, apple cider vinegar, honey, salt, and pepper to make the dressing. Add the sliced kale and julienned apple to the bowl. Toss well to coat the kale and apple with the dressing. Set aside.
  • Prepare Hot Pastrami Sandwich: Heat pan over medium heat. Butter one side of each slice of caraway rye bread. Place the buttered side of one bread slice on the pan. Add the provolone cheese on top of the bread slice.
  • Place the other bread slice on the pan, buttered side down, and add the Swiss cheese on top. Grill until the bread is toasted and the cheese has melted approximately 5 minutes. Once done, remove both bread slices from the pan and set aside.
  • Place the pastrami on the pan in a pile and the sauerkraut in a separate pile. Grill the pastrami and sauerkraut until they are warmed through, about 1 ½ to 2 minutes. Flip them over to warm the other side as well.
  • While the pastrami and sauerkraut are warming, spread mayonnaise on both sides of the bread slices. Spread yellow mustard on one half of the sandwich, if desired.
  • Assemble the sandwich: Place half of the warm pastrami on one bread slice and the other half on the other bread slice. Add sauerkraut to one-half of the sandwich. Carefully flip the bread slice with sauerkraut onto the other half with pastrami, creating a sandwich. Press the sandwich slightly to ensure it holds together. Cut the sandwich in half diagonally.
  • Serve: Plate the Hot Pastrami Sandwich alongside the Kale and Apple Slaw. Serve with kombucha.
