Ingredients

Mojito Mocktail

  • 16 oz Sparkling water
  • 2 TBSP Honey to taste
  • 2 TBSP Lime juice use more or less to taste
  • 1/4 cup Fresh mint

Salad

  • 2 cups Spring mix
  • 8 Grape tomatoes halved
  • 1/2 cup Cucumber sliced into half circles
  • 2 TBSP Red onion sliced thin

Vinaigrette

  • 3 tsp Extra-virgin olive oil
  • 1 clove Garlic grated
  • 1/4 tsp Dijon mustard
  • 1 tsp Red wine vinegar

Hamburger Helper

  • 8 oz Ground beef
  • 1 tsp Onion powder
  • 1 tsp Garlic powder
  • 2 tsp Paprika
  • 2 TBSP Cornstarch
  • 1 tsp Salt
  • 1 tsp Black pepper
  • 1 cup Water
  • 2 cups Milk
  • 1.5 cups Elbow macaroni
  • ¾ cup Cheddar cheese shredded

Instructions

  • Mojito: Stir together all ingredients until well combined. Refrigerate until ready to serve to allow the flavors to meld. Taste and adjust the lime or honey as needed.
  • Salad: Place all the ingredients for the salad into a bowl. Set aside.
  • Make the Vinaigrette: In a bowl whisk together all the ingredients for the dressing until fully combined. Set aside.
  • Preheat a skillet over medium-high heat. Add ground beef and stir to break down beef into tiny pieces, browning well. Drain some of the grease. Stir in the onion powder, garlic powder, paprika, cornstarch, salt, and pepper.
  • Stir in the water, milk, and macaroni. Simmer until the pasta is tender. Refer to the instructions on the package for cooking time.
  • Once tender, stir in the cheese. Season with salt and pepper to taste.
  • Serve hamburger helper with salad and mint mojito mocktail. Enjoy!
