Ingredients
- 4 slices Sourdough bread lightly toasted (or bread of your choice)
- 2 tbsp Yellow mustard
- 1 cups Spring mix
- 4 oz Deli ham sliced thin
- 4 slices Tomato
- 2 slices Swiss cheese halved
- 2 Pickle spears
- 1 oz Potato chips
- Leftover Potato Soup 1 cup per portion (see notes below)
Instructions
- Lightly toast the bread. Spread the mustard on each slice.
- Layer with spring mix, ham, tomato and season with salt and pepper, and cheese. Cut in half and serve with pickles and chips. Serve leftover potato soup on the side.
Notes
Warm the soup in a pot over medium low heat or in a microwave. Stir in broth as needed to reconstitute the potato to a creamy consistency.
