Ingredients

Fresh Squeezed OJ

  • 10 - 12 Oranges refrigerated so they're cold. (About 5 to 6 oranges yield an 8oz glass of OJ).

Omelet

  • 6 oz Breakfast sausage links about 2 links per portion depending upon size
  • 2 tsp Extra-virgin olive oil
  • 2 TBSP Onion diced small
  • 2 TBSP Green bell pepper diced small
  • 4 oz Deli ham diced
  • 4 Eggs beaten
  • Salt
  • Black pepper
  • 1/2 cup Cheddar cheese shredded
  • 2 slices Sourdough bread toasted
  • 2 tsp Butter
  • 2 TBSP Strawberry jam

Instructions

  • Preheat the oven to 375°F (190°C).
  • Prep the ingredients per the instructions above.
  • Cut the oranges in half. Using a manual juicer or electric juicer, juice the oranges into a pitcher or glass. Refrigerate until ready to serve.
  • For the sausage: Cook in the oven to an internal temperature of 160°F (71°C) using a thermometer.
  • Heat a non-stick pan over medium-low heat. Once hot, add the oil. Saute the onion and pepper until softened. Add in ham and saute until nicely browned. Pour in the eggs and reduce the heat to low. Season with salt and pepper. Use a spatula to pull the cooked eggs into the center, letting the liquid egg fill the space behind it. Continue going around the pan, pulling the eggs toward the center until the eggs are nearly set. Once the omelet is sliding around the pan easily and you can get a spatula underneath, flip the omelet over and turn off the heat. Sprinkle cheese over the egg and place in the oven to melt the cheese. Then fold it in half.
  • Toast the bread, then spread it with butter and jam.
  • Serve the omelet with sausage, toast, and orange juice.
